Light and fluffy banana pancakes are so tasty, it’s hard to believe they’re such a healthy option. This is because of the bananas, which are rich in vitamin C and high in potassium. Plus, they’re a great source of fibre and therefore aid digestion. Complete with the optimum amount of carbohydrates for your energy levels, bananas keep you going all day.

How to make banana pancakes

Ingredients

Allergen note: Recipe contains egg.

Eggs, separated- 4
Banana, mashed- 250g
Almond meal- 170g
Baking powder- 1 tsp
Cinnamon- 1 tsp
Coconut oil- 1 tsp

Method

  1. In a large bowl mix together the egg yolks, banana, cinnamon and baking powder.

2. Using an electric mixer, whisk the egg whites until stiff peaks form and then fold into the banana batter.

3. Add a tsp coconut oil to a non-stick pan and pour 2-3 tbsp batter onto the pan, spreading until even. Cook for 2 minutes until golden, flip and cook for 2 minutes on the other side.

4. Repeat with the remaining batter. Enjoy!
